Use the original top of the root ball as a reference and keep it level with, or slightly above, the surrounding finished surface. Burial of the lower trunk is not a substitute for stabilizing a tree. Check the level again after watering settles the backfill. On a mound, judge depth against the mound surface, not the original ground below it.
