Keep windfalls separate so impact damage, ground contact, and uncertain time since falling do not disappear into the main lot. Inspect them individually and do not assume intact skin means normal keeping quality. For a commercial harvest, maintain a clearly defined acceptance policy. Separation also lets you judge whether later deterioration belongs to the harvest method or to the condition of fallen fruit.
