Separate visibly decayed, badly damaged, and clearly immature fruit from a lot intended for normal fresh marketing. Keep sound but softer fruit identifiable for a suitable shorter handling route. Make the sorting criteria visible to everyone picking and collecting. A consistent first sort prevents later staff from having to infer which differences were intentional and which fruit entered the lot by mistake.
