Fruit temperature shows the condition of the product entering transport, which may differ from the surrounding air or refrigeration setting. Measure a representative selection and record the result with the lot details. This gives both shipper and receiver a useful starting point if quality later deteriorates. Avoid interpreting a cold vehicle display as proof that warm fruit have already been cooled adequately.
