The National Mango Board describes commercial ripening around 68 to 72 degrees F, which is also a useful reference for a moderate household room. Keep fruit away from concentrated heat and monitor their progress. A tropical kitchen may be considerably warmer than the term room temperature suggests. Choose the most stable suitable location available rather than trying to force rapid softening.
