Arrival date provides a starting order, but current ripeness and condition determine how urgently whole fruit need to move. Inspect incoming and held lots so a newly arrived ripe lot is not left behind older firm fruit. Keep lot identity when adjusting the order. For packaged cut mango, also follow the labeled dates and required refrigeration rather than applying whole-fruit ripening practices.
