A cavity between the seed and stalk region can occur as part of internal breakdown. It is not a normal measure of desirable ripeness, even if the outside looks attractive. Examine nearby tissue for abnormal softness and discoloration, and record how frequently the condition occurs within the lot. For a grower, a cut-sample record is more informative than a photograph of the empty space alone.
