Spongy patches differ from normally ripened flesh and can make pieces inconsistent in texture even when their size is uniform. Assess the cut product rather than relying on the appearance of the whole mango. Exclude abnormal tissue from portions sold or served as normal ripe flesh. If several fruit show the problem, reassess the lot's usable recovery before committing it to a large slicing job.
