A knife can carry material from the peel onto the flesh during cutting, so wash the whole mango before preparation. Rinse under running water while gently rubbing the surface, then dry it with a clean towel. Start with clean hands, utensils, and a cutting board. Removing the peel afterward does not replace cleaning the fruit before the blade passes through its surface.
