The National Mango Board describes a short refrigerated life of two to three days for cut or pureed ripe mango. Label the container with the preparation date and use it promptly. That guidance assumes sound fruit and appropriate handling; it does not restart the life of fruit already deteriorating before cutting. Freeze a sound surplus early when it will not be used within the short holding period.
