The calculation concerns fruit tissue, so the empty container must not be counted as either fresh or dried mango. Record its weight separately or use the scale's tare function as specified by the testing procedure. Keep each container matched with its sample through drying. Including a heavy dish can produce a convincing percentage that largely describes the dish instead of the fruit.
