Extra surface water adds to the fresh weight without adding fruit solids. That can lower the calculated dry matter percentage and make the sample appear less developed than a comparable sample prepared correctly. Follow the prescribed preparation method rather than rinsing or wetting tissue as an improvised step. If preparation differs, identify that result separately before using it in a picking decision.
