Assess flesh color on the fresh cut surface using the appropriate fruit reference. A dry matter test has a different purpose: comparing fresh tissue weight with dried tissue weight. The appearance of tissue after processing is not the fresh internal-color observation used in harvest assessment. Keep a photograph or description of the fresh sample with the weight record instead of attempting to reconstruct its original color afterward.
