Those comparisons answer different questions. Equal elapsed time shows how the lots perform against a shared schedule; assessment at comparable eating ripeness better separates eating quality from differences in ripening speed. Record both dates and condition where practical. Otherwise, a slower lot may be called inferior simply because it was tasted before it reached the stage used for the faster lot.
