Fruit Development, Ripening & HarvestWhy can mangoes keep adding heat to a handling room after their original field heat has been removed?
Living fruit continue to respire and release heat, with metabolic activity changing during ripening. Cooling therefore has an ongoing load as well as the initial task of removing heat carried from the orchard. Assess refrigeration against the amount and condition of fruit being held. Reaching a suitable temperature once does not demonstrate that the room can maintain it as more fruit arrive or ripening activity increases.
