Fruit Development, Ripening & HarvestWhat does seven-eighths cooling time mean for a mango load?
It is the time needed to remove seven-eighths of the initial temperature difference between the produce and the cooling medium under defined conditions. One-eighth of that difference remains; it does not mean the fruit has reached the room temperature. Record initial temperatures, load arrangement, and measurement locations when comparing systems. The metric describes cooling performance, not a universal safe mango holding temperature.
