Fruit Development, Ripening & HarvestCan an infrared surface reading verify the center temperature of a cooling mango?
An infrared thermometer measures radiation from the exposed surface, not the temperature inside the flesh. During cooling, the surface and center can differ substantially. Use a suitable product-temperature probe and a representative sampling procedure when internal temperature is the required measurement. Keep surface checks useful for screening, but do not label them as proof that the entire mango load has completed cooling.
