Cracks, inaccessible joints, and damaged coverings can retain soil and moisture where ordinary cleaning does not reach. Repair or replace unsuitable food-contact surfaces using materials appropriate for the task. Applying more sanitizer cannot be assumed to compensate for a surface that cannot first be cleaned effectively under the handling area's normal procedure.
