A cheek is one of the broad fleshy sides on either side of the mango's flattened central stone. Two cheeks therefore describe anatomical portions, not two whole mangoes or a standardized weight. Use the recipe's intended portion size and your actual fruit when planning quantities. The term is helpful for cutting and presentation, but cheek size varies and should not be treated as a fixed measuring unit.
