Flavor, Quality & StorageWhy can dried mango feel hard outside while remaining moist inside?
Excessively aggressive heating can harden the surface before moisture has escaped from the center, a problem called case hardening. Turning up the heat is therefore not a dependable shortcut when slices are drying slowly. Use suitable drying conditions, airflow, and consistent cuts, then evaluate the interior as directed by a reliable drying procedure. A tough exterior alone does not establish that the fruit is ready for storage.
