Check the center, because a sheet of puree dries inward from its edges. Dry edges can therefore conceal an unfinished middle. Spread the puree evenly and use the dryness assessment in the chosen fruit-leather procedure rather than relying only on elapsed time. Let the finished leather reach the handling stage specified by that procedure before wrapping it for storage.
