Do not assume that a general fruit-puree process covers mango. Select a tested mango preparation and follow its complete formulation, including required acid ingredients and jar size. The published mango-sauce process is a specific recipe, not permission to can any thickness or composition of mango puree. Refrigeration or freezing remains useful when your intended plain preparation does not match an established canning procedure.
