The tested mango-sauce directions specifically recommend dark storage to help retain color. Keep properly processed, sealed jars in suitable storage and date them so quality can be followed over time. Color retention is a separate concern from whether the correct canning procedure was completed. An attractive golden jar does not verify processing, and fading does not justify ignoring a damaged seal or other spoilage warning.
