A refractometer estimates total soluble solids using a scale related to sugar solutions. Mango juice also contains other dissolved compounds, so the reading is a useful sugar estimate rather than a direct separation and weighing of all sugars. Use a suitable analytical method if exact sugar composition is required. Keep ordinary Brix results labeled as soluble solids when comparing fruit or discussing a laboratory report.
