Mango FAQ

1 FAQ

Flavor, Quality & StorageHow do pH and titratable acidity answer different questions about mango juice?

A pH measurement describes acidity in terms of hydrogen-ion activity, while titration measures the amount of base needed to reach a defined endpoint and reports an acid equivalent. They are related but not interchangeable numbers. Ask which measurement a fruit-quality specification requires and retain its method and units. A pH reading alone should not be relabeled as the total acid content of a mango sample.
