Flavor, Quality & StorageWhat happens to mango cell walls as the flesh softens during ripening?
Ripening involves changes in wall polysaccharides and the activity of enzymes associated with tissue breakdown. Firmness therefore reflects structural changes as well as the fruit's water condition. In a quality trial, pair texture measurements with the ripening stage and handling history rather than describing every loss of firmness as dehydration. The mechanisms are useful for interpreting results, but no single enzyme measurement defines the complete eating experience.
