Flavor, Quality & StorageHow is chilling injury different from freezing injury in mango?
Chilling injury can occur at low temperatures above the point where tissue freezes, through physiological and membrane disturbances. Freezing injury involves ice formation and damage associated with it. Preserve the actual temperature history when investigating either problem rather than using frozen as a description for all cold-damaged fruit. Similar later softness or discoloration does not establish that the two lots experienced the same kind of injury.
