Flavor, Quality & StorageHow is astringency different from sourness when describing a mango?
Sourness is an acid-related taste, whereas astringency is a drying, rough, or puckering mouth sensation associated with interactions between compounds such as tannins and saliva. They can occur together but are not interchangeable tasting terms. Record them separately instead of describing every puckering mango as highly acidic. A sensory note is not a substitute for an analytical acidity measurement or a food-safety assessment.
