Flavor, Quality & StorageHow does osmotic dehydration change mango differently from drying plain slices?
An osmotic treatment places fruit in a concentrated solution that draws out water while some dissolved material, often sugar, can enter the tissue. Later air-drying therefore begins with a composition already changed by that exchange. Compare ingredient lists and process details when evaluating products. A sweeter, softer osmotically treated slice should not be described as equivalent to unsweetened mango dried without an infusion step.
