A utensil returned from serving can carry contamination from hands or other food back into the reserved supply. Use separate clean utensils and replenish a serving portion without returning leftovers to the untouched batch. Temperature control remains important, but refrigeration does not undo contamination introduced by repeatedly mixing served and unserved food.
