Do not make that substitution unless a reliable tested process explicitly validates the equipment and food together. Pressure capability alone does not establish the same heat treatment throughout jars. Use the preservation method and equipment specified by an authoritative tested recipe, or choose an appropriate refrigerated or frozen preparation instead of improvising a shelf-stable process.
