The amount and arrangement of fruit change the operating load and the routes available for airflow. A successful small trial does not establish performance at peak intake. Check product temperatures at representative positions under the intended commercial loading pattern. Use those observations to set practical intake and cooling schedules instead of assuming the empty room's air reading proves sufficient capacity.
