Internal texture, aroma, and some defects change as fruit ripen. Comparing one supplier's firm fruit with another supplier's eating-ripe fruit can produce misleading rankings. Record incoming maturity and the assessment stage, with comparable handling between them. Keep arrival condition as a separate result when it matters to the contract rather than combining unlike stages into one quality score.
